80 days for "bulb". Tender perennial grown as an annual. You are in for a real treat with this wonderful, but often overlooked vegetable. The white, crisp bulbous stem base has a delicious, anise flavor and can be eaten raw, used to flavor soups, pasta, and sautéed dishes, or even deep-fried. Feathery foliage is attractive in the garden and is an excellent fresh garnish to fish, chicken, tomatoes, and sauces. Seed can also be harvested as a spice.
When to sow outside: 1 to 2 weeks after average last frost, or midsummer for fall harvest (which produces the largest "bulbs"). For foliage only: Every 3 weeks after average last frost until midsummer.
When to start inside: Only needed for spring planting bulbous base production in hot summer climates. Sow inside 4 to 6 weeks before average last frost.
Harvesting: BULBOUS STEM BASE: Harvest any time after the base begins to fatten, and before plant begins to bolt (prematurely go to seed). Cut just below the soil surface. LEAVES: Can be clipped for fresh use almost anytime after plant becomes established.
SEEDS: Harvest seeds when they turn from yellow green to grey green. If they turn brown, they may fall to the ground before you can harvest them.

About Botanical Interests
Curtis and Judy met while waiting to interview for the same horticultural job and soon found they shared a boundless enthusiasm for gardening. Botanical Interests began out of their mutual passion and personal desire for better quality seed and more informational tools to help and inpire gardeners.
"We wanted a level of purity and quality that wasn't easy to find," recalls Curtis. So they searched out the highest quality seed available and began their business in 1997, in the spare bedroom of their Colorado home. The business objectives they established then still hold strong for them now: to inspire and educate gardeners; to provide high quality seed to their customers; and to create an enjoyable work place for employees.
Over the years, Judy and Curtis' family has grown along with their line of seeds which now attracts and pleases customers nationwide.
