They're so delicious, we didn't need to add salt. Black Eyed Peas (Vigna unguiculata) likely originated in China and came to the American South through Africa. They are the peas referred to in the old saying "Rice for riches, peas for peace." Delicious and completely nutritious with greens, vegetables, and grain. One of the most popular legumes used in traditional Southern cooking and in the famous soup 'Hoppin John'. They are beige and medium round with a distinctive dark 'eye'; a pretty addition to salads and side dishes. Delicious in soups, salads and casseroles.
