Gardentime Organic Orzo Pasta
Orzo is wonderful as a bed for sauces or meats/fish/poultry. It's also great in soups. Orzo can be used to replace rice in most any dish.
Bring 4 quarts of water and 2 tsp. salt to a rapid boil. Add 2 tsp. olive oil and pasta to boiling water. Stir lightly until water returns to a boil. Cook three minutes, or until pasta is flexible, but slightly firm. Be careful not to overcook!
# After the pasta is ready, drain it in a colander, but don't rinse it unless you are using it in a pasta salad or casserole.
# Reserve a small amount of the flavorful pasta water in case the pasta becomes too dry and needs to be moistened.
