Lima Atlantic Sea Salt
Atlantic sea salt is considered by many chefs to be as important as fresh pepper when it comes to preparing fine food. It is even considered to be the best in the world.
Lima salt is harvested in the Olhão region on the Portuguese coast, in the natural reserve of 'Ria Formosa'; Harvest is done entirely manually, in a traditional manner, so that only sea water, sun, wind and human efforts are used in the production process. The rich flavor of natural sea salt is incomparable to the sterile taste of industrial salt. Careful manual harvesting ensures that a thin layer of salt is left on the bottom of the salt marsh, which constitutes a natural barrier between the salt to be harvested and the soil. In this manner, the Lima salt remains white.
Unrefined. It is a fine grind...almost very fine. No additives. No preservatives. No heating. Kosher Certified. Ecocert. Produced and package in Portugal.

In the 1950s, the paths of two men crossed. One was Belgian, the other Japanese. These two men met while campaigning for a World Parliament destined to guarantee peace.
Edgar Gevaert was an artist, and Georges Ohsawa a philosopher. The latter had laid down the nutritional principles of Japanese philosophy, macrobiotics (from the Greek words for long and life, i.e. the route to longevity), in more than three hundred books.
