Organic Planet Organic Soba NoodlesSoba is the thin, rectangular, traditional Japanese-style buckwheat pasta popular in Tokyo and northern Japan. Perfect served hot in winter or cold in summer, these noodles are the smoothest, quickest cooking organic Asian-style buckwheat (soba) pasta. While both wheat noodles like Udon or Lomein and Soba can be stir-fried, Soba is surprisingly well suited to use in noodle salads especially with a spicy or Asian-style dressing. When serving Soba noodles with dipping broth, the most popular use of noodles in Japan, the broth is usually more intensely flavored with shoyu and mirin than when using wheat noodles such as Lomein and Udon. Also, whereas broth for Soba is traditionally flavored with wasabi, Japanese seven-spice is more commonly used with Udon.

Organic Planet Organic Oriental Noodles are made with Certified Organic Heirloom Grains grown on the vast plains of Inner Mongolia, China's equivalent to North Dakota or Manitoba, in remote areas far from polluting population centers or heavy industry. Such older grain varieties retain location-specific nutritional values that modern hybrid agribusiness varieties have lost. Our pasta is made by a Japanese-Chinese partnership using traditional Japanese noodle production techniques. The Japanese partner company built its own mill with the latest milling equipment on site at the pasta factory north of Beijing. Their master millers trained the Chinese staff on how to grind our flour to order for each run to guarantee freshness.
