While both wheat noodles like Lomein and buckwheat noodles like Soba can be stir-fried, Lomein more readily absorbs the flavor of broths, sauces, and seasonings because of its less assertive flavor. By the same token, when serving wheat noodles like Lomein with dipping broth, the most popular use of noodles in Japan, the broth is usually less intensely flavored with shoyu and mirin than when using Soba.

Organic Planet Organic Oriental Noodles are made with Certified Organic Heirloom Grains grown on the vast plains of Inner Mongolia, China's equivalent to North Dakota or Manitoba, in remote areas far from polluting population centers or heavy industry. Such older grain varieties retain location-specific nutritional values that modern hybrid agribusiness varieties have lost. Our pasta is made by a Japanese-Chinese partnership using traditional Japanese noodle production techniques. The Japanese partner company built its own mill with the latest milling equipment on site at the pasta factory north of Beijing. Their master millers trained the Chinese staff on how to grind our flour to order for each run to guarantee freshness.
