The cane juice is evaporated and spun in a large turbine to produce the distinctive sparkling golden crystals. For this reason, this style of sugar is often referred to as Turbinado Sugar. It has a distinctive color and natural flavor produced by keeping the sugar cane molasses in and around the crystals.
