clove garlic, crushed in a press (optional)

peeled and seeded diced cucumber
- 1/3

peanut halves

Directions:

Prepare truRoots Sprouted Quinoa according to the package directions. Let cool.
Combine the oil, lime juice, mint leaves, jalapeno, sugar, optional garlic and the salt in a large bowl. Whisk well. Add the quinoa, cucumber, and peanut halves. Toss gently to combine.
Cover and refrigerate for at least 1 hour. Fluff the grains with a fork before serving.
