Spectrum Naturals Organic Shortening
- 1 3/4

granulated sugar
- 3
eggs (or Egg Replacer)
- 3

mashed ripe bananas
- 2 1/4
cup
unbleached flour
- 1/2
teaspoon
baking powder
- 1/2
teaspoon
baking soda
- 1/2
teaspoon
salt

Directions:

Preheat oven to 350 degrees, Spray two 9" round layer cake pans with non stick spray.
Cream the Spectrum Naturals Organic Shortening. Add the sugar and beat until creamy and sugar is well blended. Add one egg at a time, beating for 1 minute after each egg. Add the mashed banana and beat for one minute until well blended.
Sift the flour, baking powder and baking soda and salt. Add to the creamed mixture all at once. Stir to combine, mixing until all the flour is incorporated.
Pour batter evenly into the pans and bake for 30 minutes until a cake tester inserted into the center comes out clean. Let sit for a minute or two then turn out onto cooling racks.
