eggs (or Egg Replacer)

soymilk
- 1/4

canola oil
- 1/4

plus 2 TBS honey
- 1/2
cup
banana, well ripened and mashed
- 1
teaspoon
vanilla

teaspoon
baking powder

Directions:

Makes about 12 Slices
Preheat oven to 350. Spray a loaf pan with cooking spray. Mix dry ingredients in a medium mixing bowl, form a well in the center. In a separate bowl blend liquid ingredients then pour into the well in the dry ingredients, mix until well blended. Pour into prepared loaf pan. Bake at 350 for about 40 minutes or until toothpick inserted in center comes out clean. Let cool five minutes. Remove from pan on a flat surface
*Dough will not rise above top of pan. Lay foil over top of baking bread for last 10 minutes of baking time to prevent burned edges. Do not remove bread from oven to place foil over it. Bread is fragile and batter might collapse.
